The other day I got bored with the same old chapati n mixed rices I was making... I badly wanted to try something new and planned to make Pav Bhajji.. I had lots of second thoughts upon my decision to take up a new war with the kitchen world. Then finally planned to go for the challenge...
And believe me .. the bhaji turned out to be excellent... It was tasting awesome.. Never thought I wud get it 10/10 on the first . Well I wud like to share the procedure I followed..
Ingredients:
1) 250gms Mashed Potato
2) 4 to 5 Tomatoes
3) 1 Big green Bell pepper
4) 1 Big Onion
5) 100 gms Butter
6) 2 tsp of MTR Pav Bhajji Masala
7) 1/2 tsp of Chilli Powder
8)1tsp Ginger Garlic Paste
Procedure:
1)Heat oil or butter on the tava or a pan. Add Ginger Garlic Paste, saute it for a minute.
2)Fry onions nicely till golden brown. Add the finely chopped tomatoes.
3)Fry nicely stirring with the masher (you can use a round spoon too) till all the moisture evaporates and the tomatoes and capsicum are properly cooked. The mixture starts leaving oil on the side.
4)At this point add the Pav Bhaji masala and the Red chilli powder. (Pav Bhaji is usually spicy…so adjust the proportion of red chilli powder to your taste)
5)Fry for one minute and then add the potatoes and all the vegetables except capsicum.
6)Mash and stir the mixture nicely.Once the mixture is homogenous, add the finely chopped Capsicum. Add salt. Cook till the capsicum becomes little tender. Don’t overcook it, it should be crunchy.
7)Add about 1 cup water to the Bhaji. Let it boil for a few minutes. Once it boils nicely remove from the tava and serve.
8)Slit the Pav horizontally like you would for a burger and apply butter on both sides. On the same tava, which you made Pav bhaji roast the buns for a few minutes.
9)Top the bhaji with 1-2 spoons of butter and serve with hot Pav , chopped onions, chopped green coriander and a piece of lime.
